Basic Breakfast Muffins

Looking for the easiest yummy breakfast?! These will definitely meet your needs with so many options and variations.  Once you mix together the basics you can take the muffin cups so many different directions. I stayed pretty simple and used blueberries topped with chia seeds. They can be eaten warm or cold and I usually prepare it the way I would oatmeal. Milk, yogurt, extra cinnamon and maybe a few chocolate chips. I made some in my mini muffin tins which made them the perfect size for my little niece which thought they were great all on their own.

I know that you probably just want to get to the recipe part so without further ado, the Basic Oatmeal Cups!

DISCLAIMER! I like to cook by throwing this and that together, Here are the Basic steps!




2 Large Eggs Lightly Beaten

  • 1tsp. Vanilla Extract

  • 2 Large Bananas

  • 1 TBsp. Honey

  • 2 1/2 Cups Dry Old Fashioned Oats

  • 1Tbsp. Baking Powder

  • 1 1/2 cup Milk (I do like using almond milk but you use whatever you want!)

  • 2ish cups of berries but really whatever you have!


Preheat oven to 350°F

  1. Spray muffin tins

  2. Combine Eggs, honey, vanilla, mashed banana; mix well.

  3. Combine Oats, baking powder, cinnamon.

  4. Add Oat mixture to wet ingredients.

  5. Add milk and mix well.

  6. Divide between muffin tins and top with fruit.

  7. Bake 25-30 mins until toothpick comes out clean.


  • Add peanut butter

  • Top with Chia Seeds, Hemp hearts, Gogi Berries
